You know the vegetarians might be on to something. If you eat this vegetarian stir fry recipe of fried rice and green vegetables, you will probably being having the most nutritious meal of the day. The rice will certainly fill you up and the vegetables are just downright healthy. And who among us doesn’t like to mess around cooking stir fried food? It is fun and a lot less boring than shoving something into the oven. We are publishing more and more vegetarian recipes to keep up with the requests that we are getting from our readers.

How To Make Stir Fry Rice & Green Vegetables


  • 1 cup jasmine rice
  • 2 tablespoons vegetable or peanut oil
  • 1 tablespoon Thai green curry paste
  • 6 scallions, sliced
  • 2 garlic cloves, crushed
  • 1 zucchini, cut into thin sticks
  • 4 ounces yard-long beans, cut into short lengths
  • 6 ounces asparagus, trimmed
  • 3-4 fresh Thai basil leaves

Cooking Directions

Cook the rice in lightly salted boiling water for 12-15 minutes, drain well, then cool thoroughly and chill overnight.
Heat the oil in a wok and stir fry the curry pasted for 1 minute. Add the scallions and garlic and stir fry for 1 minute.
Add the zucchini, beans, and asparagus, and stir fry for 3-4 minutes, until just tender. Break up the rice and add it to the wok. Cook, stirring constantly for 2-3 minutes, until the rice is hot. Stir in the basil leaves.
Serve hot.
