The rice will certainly fill you up and the vegetables are just downright healthy. And who among us doesn’t like to mess around cooking stir fried food? How To Make Stir Fry Rice & Green Vegetables
- 1 cup jasmine rice
- 2 tablespoons vegetable or peanut oil
- 1 tablespoon Thai green curry paste
- 6 scallions, sliced
- 2 garlic cloves, crushed
- 1 zucchini, cut into thin sticks
- 4 ounces yard-long beans, cut into short lengths
- 6 ounces asparagus, trimmed
- 3-4 fresh Thai basil leaves
Cook the rice in lightly salted boiling water for 12-15 minutes, drain well, then cool thoroughly and chill overnight.
Heat the oil in a wok and stir fry the curry pasted for 1 minute. Add the scallions and garlic and stir fry for 1 minute.
Add the zucchini, beans, and asparagus, and stir fry for 3-4 minutes, until just tender. Break up the rice and add it to the wok. Cook, stirring constantly for 2-3 minutes, until the rice is hot. Stir in the basil leaves.
